Guacamole, a dip made from avocados, is originally from Mexico. The name is derived from two Aztec Nahuatl words - ahuacatl (avocado) and molli
(sauce). The trick to perfect guacamole is using good, ripe avocados.
Check for ripeness by gently pressing the outside of the avocado. If
there is no give, the avocado is not ripe yet and will not taste good.
If there is a little give, the avocado is ripe. If there is a lot of
give, the avocado may be past ripe and not good. In this case, taste
test first before using.
Perfect Guacamole Recipe
Ingredients
- 2 ripe avocados
- 1/2 red onion, minced (about 1/2 cup)
- 1-2 serrano chiles, stems and seeds removed, minced
- 2 tablespoons cilantro leaves, finely chopped
- 1 tablespoon of fresh lime or lemon juice
- 1/2 teaspoon coarse salt
- A dash of freshly grated black pepper
- 1/2 ripe tomato, seeds and pulp removed, chopped
Garnish with red radishes or jicama. Serve with tortilla chips.
Method
1 Cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a mixing bowl. (See How to Cut and Peel an Avocado.)
2 Using a fork, mash the avocado. Add the chopped onion,
cilantro, lime or lemon, salt and pepper and mash some more. Chili
peppers vary individually in their hotness. So, start with a half of
one chili pepper and add to the guacamole to your desired degree of
hotness. Be careful handling the peppers; wash your hands thoroughly
after handling and do not touch your eyes or the area near your eyes
with your hands for several hours.
Keep the tomatoes separate until ready to serve.
Remember that much of this is done to taste because of the
variability in the fresh ingredients. Start with this recipe and adjust
to your taste.
3 Cover with plastic wrap directly on the surface of the
guacamole to prevent oxidation from the air reaching it. Refrigerate
until ready.
4 Just before serving, add the chopped tomato to the guacamole and mix.
Variations
For a very quick guacamole just take a 1/4 cup of salsa and mix it in with your mashed avocados.
You don't need to have tomatoes in your guacamole.
To extend a limited supply of avocados, add either sour cream or
cottage cheese to your guacamole dip. Purists may be horrified, but so
what? It tastes great. In fact, guacamole with a little cottage cheese
added to it is my favorite.
Guacamole as a deep while watching a game, with chips, clamato, beer, at the grill is just delicious.

For the First Time, New Travel Notices for Mexico Specifically Separate La Paz and Other Regions, Confirming It as One of the Safest Cities in North America La Paz LA PAZ, Baja California Sur, Mexico– In a significant move that recognizes the safety of La Paz and Baja California Sur, the U.S. State Department’s latest 2012 travel update states no security concerns for the region. For the first time, the regular update includes “no advisory” in effect for La Paz and the entire South Baja region. The move reaffirms the reputation of La Paz as the city of peace and abundance on the Sea of Cortez, and one of the safest places in the world to live in and visit.
“We applaud the U.S. State Department for recognizing what every visitor to La Paz experiences here: That it is a beautiful, peaceful city, and – along with the entire South Baja region – it is an entirely secure and rewarding place for vacations, for owning a second home, or for retirement,” said Agustin Olachea, President of La Paz Tourism Board, and spokesperson for the La Paz Developers Tourism Council. “Travelers can feel confident coming here, knowing that the peace that one quietly encounters in La Paz extends directly from the abundant ocean life and cultural richness that sets La Paz apart from any place on the planet.”
The report marks the first time that the State Department has broken down its Mexico travel update into specific populated areas and regions. According to an unnamed State Department source, the “granularized” report was compiled at the request of American business groups interested in employee security. It was not done to appease various boosters of Mexican tourism. Previous to this report, the US State Department’s Bureau of Consular Affairs issued travel warnings to larger, more general areas for Americans visiting Mexico. The result was confusion, with some tourists curtailing plans for visiting Mexico in spite of huge areas of the country unaffected by recent drug-related violence.
The safety of Baja Sur in particular was also underscored by the presence of U.S. Secretary of State Hillary Clinton and other international leaders at last month’s G20 Foreign Ministers Summit in Los Cabos.(Also, look for Hilary´s whale watching tour in announcements blog)

The
headlines are heartbreaking and seemingly never-ending. Day after
day—paper after paper—reports of horrific crime and violence in México
are blasted across American broadsheets and airwaves. And, yes, it’s
true. México is a country at war. Its leaders, police, and military are
every day fighting a battle against drug cartels, corruption, and
senseless violence.
But to characterize all of México as dangerous would be a
gross injustice—and inaccurate. While there has been a spike in
high-profile, drug-related incidents, a recent Brookings Institute study
adds perspective. The report’s author, Latin American expert Kevin
Casas-Zamora, told a Miami Herald reporter: “Violence in México is
concentrated in a few cities … But in the country as a whole, it doesn't
come even close to Washington, D.C.’s.” Sinaloa, Chihuahua, and Tijuana
in Baja California have been affected, but México covers more than
760,000 square miles and the vast majority of it is safe, with numerous
cities and states boasting crime rates lower than in many parts of the
United States.
Baja California Sur, home to Cabo San Lucas and San José del
Cabo, is one of those states. According to an April report, it has a
homicide rate 12 times lower than Honolulu’s, 18 times lower than
Miami’s, and 26 times lower than Orlando’s. And a fall study of the
entire country, ranked Baja California Sur third in public safety,
tourism services, and transportation infrastructure.
So why am I telling you this? It’s because I love México,
especially Baja California Sur. I’ve spent my entire life traversing the
peninsula, discovering picture-perfect sunsets, storybook villages, and
natural wonder after natural wonder. It’s rich in culture, culinary
traditions, and eminently visitable destinations. I would hate for
people to miss out on the opportunity to experience it for themselves
because of misguided fear. Fortunately that doesn’t seem to be the case.
At least, not lately.
According to the Mexico Tourism Board, the number of
international visitors flying into México from January to August last
year was up 19 percent over the same period in 2009 (about six out of 10
international visitors are Americans). Despite the still-recovering
global economy, tourists are also finding their way back to Los Cabos.
Through the first nine months of 2010, hotel occupancy was up 5 percent
over the previous year. Another good sign: As of mid-December, Virgin
America is offering flights from San Francisco to San José del Cabo. The
carrier joins other airlines—including Alaska, American, U.S. Airways,
and United—who serve the region.
What’s
prompting this resurgence in travel is simple: Los Cabos is fun,
accessible, gorgeous, safe, and committed to staying that way. Removed
from the violence plaguing parts of the rest of the country—there’s a
body of water separating it from the mainland and a thousand miles
between Cabo and Tijuana—vacationers can relax, knowing they are safe
and secure.
The government is not relaxing, however, its efforts to
protect locals and tourists and improve their services. A fall amendment
to the U.S. State Department’s México travel warning, which included no
specific mention of Los Cabos, states, “The Mexican government makes a
considerable effort to protect U.S. citizens and other visitors to major
tourist destinations.”
The Mexican Naval Marine base, headed by Admiral Felipe
Lozano Armenta, protects and assists maritime traffic and operates
search-and-rescue missions in and about Los Cabos. In its arsenal:
intercepting patrol and defender boats and helicopters, each manned 24-7
with trained and qualified crews.
The Administración Portuaria Integral (or port authority)
works with the Navy to maintain public order and to ensure confidence in
the area’s safety and security. The fruit of their labor often goes
unappreciated until people realize they’ve prevented a violent situation
like what many are dealing with elsewhere in the country from erupting
in Los Cabos.
Visit during high-travel season, and you’re sure to encounter
foot patrols along city streets, the marinas, and on the beach. All
personnel are trained to implement contingency plans and programs to
assist in times of emergency, whether natural or man-made. That extra
training is something they’ve implemented with local police, too, making
them better prepared for any incident.
“We have over 15,000 foreigners living in Baja California
Sur,” says Marco Ehrenberg, Baja California Sur’s director of
international relations. “Many of the rich and famous still choose Cabo
as their number one destination. Don’t you think they have done their
homework? Why do we have the best hotels and the highest number of
private air travel in México for a tourist destination? Because Los
Cabos is safe, fun, and friendly.”
“México is a big, incredibly diverse country, so violence
along the border does not have any effect on a vacation in Los Cabos,”
adds Miroslava Bautista Sánchez, the Los Cabos secretary of tourism.
“Thousands of flights, cruise lines, and private yachts choose Los Cabos
as their travel destination...Why? Because Los Cabos is a symbol of a
peaceful place to visit and to live.”
Now I’m not saying that a trip to Los Cabos is risk free.
There are risks associated with every kind of travel. What I am saying
is that it’s safe. It’s a place where you can come to relax, have fun,
and not worry—as long as you practice good judgment and act responsibly
(people who ignore those rules are at risk no matter where they are).
And, on the off chance that something does go wrong, you can there is
the proper infrastructure in place to handle any mishap.

NKBA members say these kitchen concepts will be big in 2012, if follows the trends will keep the up-to-date look in your property to maintain the value, you may want to look into if looking to sell

Each year, the National Kitchen and Bath Association (NKBA) surveys
its members to identify the latest design and specification trends in
kitchen and bath design. This year, 350 NKBA members took part in the
survey. Here are five emerging kitchen trends they identified:
1. Cherry wood in decline

Cherry wood has consistently been the first or second most popular
type of wood for cabinetry, jockeying for the top spot with maple each
year. However, designers are slowly shifting away from it. While 80
percent of NKBA member kitchen designers had recently specified cherry
cabinetry as 2010 approached, that figure dropped to 72 percent last
year and fell again to 69 percent heading into 2012.
No one other wood species is taking that market share on its own, as
even maple dropped in popularity this year, falling from 77 percent last
year to 70 percent now. Instead, a number of lesser-used woods are
being specified more often, including oak, which is specified by twice
as many designers now (22 percent) versus two years ago (11 percent);
walnut, which has increased from 3 percent in 2010 to 9 percent in 2011
to 13 percent today; birch, which is now specified by three times as
many kitchen designers as it was a year ago (15 percent vs. 5 percent),
and bamboo, which has doubled from 5 percent last year to 10 percent
now. While alder is currently specified by 27 percent of kitchen
designers, that figure is down from 30 percent last year and from 40
percent two years ago, according to NKBA
2. Darker finishes

Natural kitchen cabinetry continues a steady move toward darker
finishes. While light natural finishes have been recently specified by
30 percent of kitchen designers, medium natural finishes stand at 55
percent, with dark natural finishes at 58 percent. Two years ago, dark
natural finishes were specified by only 43 percent of designers.
Among painted cabinetry, white continues to be the most popular
option, as white cabinets have been recently specified by 59 percent of
NKBA member kitchen designers, while other colors were specified by only
38 percent of designers. Another trend to note is that distressed
finishes are making a comeback. After being recently specified by 15
percent of designers going into 2010, that figure dropped to just 5
percent last year, but has now risen to 22 percent
3. Glass back splashes

Although glass remains a niche material for kitchen counter tops, it’s
been recently used by more than half of kitchen designers as a back splash material, rising from 41 percent a year ago to 52 percent
now. This trails only natural stone tile at 60 percent and ceramic tile
(including porcelain), which has been specified of late by some 74
percent of designers. Even at that high rate, ceramic tile back-splashes
are on the decline, as they stood at 78 percent a year ago and 88
percent two years ago.
Other popular back-splash materials are granite at 30 percent and
quartz at 20 percent. The popularity of these materials as back-splashes
is due to their high use as counter top materials. Finishing off a
granite or quartz counter top with a matching back-splash is quite common;
however, the same doesn’t hold true for solid surfaces. While these
materials are very popular for counter tops, they’re seldom used for back-splashes, as they’re specified by just 11 percent of designers
4. LED lighting

Energy-efficiency is clearly not a fad, but a real trend that can be
seen taking hold in homes across the United States and Canada. Despite
the higher initial cost, light-emitting diode, or LED, lighting is proof
of this trend. Specified by 50 percent of NKBA member kitchen designers
entering 2010, that rate increased to 54 percent the following year and
has jumped over the past year to 70 percent. However, compact
fluorescent lights (CFLs) aren’t sharing in this trend. Although they
use roughly a quarter the energy of an incandescent bulb when producing
the same amount of light, measured in lumen s, the poor color of the
light they produce and the presence of mercury in these bulbs are
keeping them out of newly remodeled kitchens, falling from 36 percent
last year to 26 percent today.
5. Pull-out faucets

Pull-out kitchen faucets have become established as the dominant type
of kitchen faucet. Designers are increasingly eschewing the standard
faucet with a detached side spray in favor of pull-out models that
integrate the two functions into a single unit. Viewing the large number
of new pull-out faucet models at the NKBA’s Kitchen & Bath Industry
Show, it’s clear these units can be seamlessly incorporated into almost
any kitchen design style.
While standard kitchen faucets were specified by just under half of
designers as 2010 approached, barely more than a third of designers have
recently specified them. Meanwhile, the use of pull-out faucets has
increased from 88 percent to 91 percent to 93 percent.

Lionsgate has acquired U.S. rights to the at-sea adventure; Glen Basner's FilmNation is launching the project to foreign buyers at EFM.
BERLIN — Marking his return to the big screen, Robert Redford will star in All Is Lost for writer-director J.C. Chandor.
Glen Basner's FilmNation announced Thursday that it is handling foreign rights to the film as
the European Film Market got under way. The high-profile project has
landed Lionsgate as domestic distributor.
All Is Lost is the exhilarating journey of one man's fight to survive. The film is set entirely at sea, and Redford — who was last seen in theaters in
2007's Lions for Lambs — is the only cast member.
Chandor is set to begin shooting this summer at Baja Studios in Rosarito Beach, Mexico, which was built by Fox for Titanic.
Redford's involvement in All Is Lost
has been rumored for weeks, and he's now in final talks. Redford met
Chandor at the Sundance Film Festival in 2011, where the director's Margin Call
made its worldwide premiere. Chandor is up for an Oscar for best original screenplay for the critically acclaimed film, his first helming effort.
Margin Call's Neal Dodson is producing All Is Lost via his Before the Door Pictures banner alongside Black Bear Pictures' Teddy Schwarzman and Treehouse Pictures' Justin Nappi. They are fully financing the project. Also producing are Anna Gerb and Jason Blum.
"We had a charmed experience on Margin Call with J.C. and are thrilled to be taking our relationship with him to the next level on his audacious sophomore film," Dodson said.
Before the Door's Zachary Quinto and Corey Moosa will executive produce with Cassian Elwes,Laura Rister and Kevin Turen.
Elwes and Rister negotiated the financing deals on behalf of the film, along with WME's Alexis Garcia. Redford is repped by CAA and attorney Barry Tyerman; Chandor is repped by WME. "The combination of an exciting, new filmmaker and iconic actor like Robert Redford will be a collaboration that audiences around the world will take note of," Basner said.
All Is Lost is sure to draw the keen eye of foreign buyers, who have no shortage of
high-profile projects to choose from at EFM. FilmNation's newly announced Philip Seymour Hoffman starrer A Most Wanted Man, directed by Anton Corbijn,
is among the titles generating strong interest as the market as the Berlin International Film Festival officially gets under way (Corbijn is on the festival jury).

Introduction
The holiday of Cinco De Mayo, The 5th Of May, commemorates the victory of the Mexican militia over the French army at The Battle Of Puebla in 1862. It is primarily a regional holiday celebrated in the Mexican state capital city of Puebla and throughout the state of Puebla, with some limited recognition in other parts of Mexico, and especially in U.S. cities with a significant Mexican population. It is not, as many people think, Mexico's Independence Day, which is actually September 16.

Setting The Stage
The battle at Puebla in 1862 happened at a violent and chaotic time in Mexico's history. Mexico had finally gained independence from Spain in 1821 after a difficult and bloody struggle, and a number of internal political takeovers and wars, including the Mexican-American War (1846-1848) and the Mexican Civil War of 1858, had ruined the national economy.
Archduke Ferdinand Maximilian during this period of struggle Mexico had accumulated heavy debts to several nations, including Spain, England and France, who were demanding repayment. Similar debt to the U.S. was previously settled after the Mexican-American War. France was eager to expand its empire at that time, and used the debt issue to move forward with goals of establishing its own leadership in Mexico. Realizing France's intent of empire expansion, Spain and England withdrew their support. When Mexico finally stopped making any loan payments, France took action on its own to install Napoleon III's relative, Archduke Maximilian of Austria, as ruler of Mexico.
Mexico Confronts The Invasion

France invaded at the gulf coast of Mexico along the state of Veracruz (see map) and began to march toward Mexico City, a distance today of less than 600 miles. Although American President Abraham Lincoln was sympathetic to Mexico's cause, and for which he is honored in Mexico, the U.S. was involved in its own Civil War at the time and was unable to provide any direct assistance.

Marching on toward Mexico City, the French army encountered strong resistance near Puebla at the Mexican forts of Loreto and Guadalupe. Lead by Mexican General Ignacio Zaragoza Seguin, a smaller, poorly armed militia estimated at 4,500 men were able to stop and defeat a well outfitted French army of 6,500 soldiers, which stopped the invasion of the country.
The victory was a glorious moment for Mexican patriots, which at the time helped to develop a needed sense of national unity, and is the cause for the historical date's celebration.
Unfortunately, the victory was short lived. Upon hearing the bad news, Napoleon III had found an excuse to send more troops overseas to try and invade Mexico again, even against the wishes of the French populace. 30,000 more troops and a full year later, the French were eventually able to depose the Mexican army, take over Mexico City and install Maximilian as the ruler of Mexico.

With the American Civil War now over, the U.S. began to provide more political and military assistance to Mexico to expel the French, after which Maximilian was executed by the Mexicans - his bullet riddled shirt is kept at the museum at Chapultepec Castle in Mexico City.
So despite the eventual French invasion of Mexico City, Cinco de Mayo honors the bravery and victory of General Zaragoza's smaller, outnumbered militia at the Battle of Puebla in 1862.
Today's Celebration
For the most part, the holiday of Cinco de Mayo is more of a regional holiday in Mexico, celebrated most vigorously in the state of Puebla. There is some limited recognition of the holiday throughout the country with different levels of enthusiasm, but it's nothing like that found in Puebla.

Traditional Mexican dancers Celebrating Cinco de Mayo has become increasingly popular along the U.S.-Mexico border and in parts of the U.S. that have a high population of people with a Mexican heritage. In these areas the holiday is a celebration of Mexican culture, of food, music, beverage and customs unique to Mexico.
Commercial interests in the United States and Mexico have also had a hand in promoting the holiday, with products and services focused on Mexican food, beverages and festivities, with music playing a more visible role as well.
Several cities throughout the U.S. hold parades and concerts during the week following up to May 5th, so that Cinco de Mayo has become a bigger holiday north of the border than it is to the south, and being adopted into the holiday calendar of more and more people every year.

The National Association of Home Builders (NAHB) annually conducts its Best in American Living Awards (BALA).
These awards, open to builders and design professionals, acknowledge
that good design "is not and should not be limited to high-priced and
custom homes."
The NAHB uses these design awards to look
for upcoming trends for new home design. This year the jurors
identified eight design trends that will have an influence on new home

When speaking about these
trends at the International Builders Show, held in February in Orlando,
Fla., BALA jurors Heather McCune, Mark Kiner and Victor Mirontshuk
all noted that new home design is significantly better now than just a
few years ago. Unlike in the recent boom years, when just about
anything built was sold, strong competition in the current market is
forcing all builders to improve home design.
A better home with an eye to the future. Now that's what I call better living.
Design trend No. 1: classic, yet contemporary
The
new houses with strong sales now are those that blend modern and
traditional elements to create cleaner and simpler elevations. Interior
spaces are clean, bright and simple. Gone are the heavy detailing and
generous ornamentation of the recent past.

Design trend No. 2: outdoor spaces as an extension of living space
Whether
for a single-family house or a multifamily building, homebuyers are
looking for private outdoor spaces that blend seamlessly with the
indoors. This trend cuts across geographic regions, being as true in
the colder sections of the country as in the warmer, milder areas.

Design trend No. 3: the family triangle
It
used to be that open floor plans were limited to certain geographic
regions and buyer profiles. Now the open floor plan is desired
throughout the country and by every market segment. The old living room
has been replaced by a flexible space that can be used as needed while
still being close to the family triangle.
The jurors noted that
these new open plans rely on light and detail to give a feeling of
spaciousness rather than simply being large.
